Sweet potato surprise


This is the season of fresh vegetables and sweet potato is one of them. We don't experiment much with this humble vegetable; we rather stick to the same limited age old recipes and keep on trying the same things year after year. 
This is one of my most favourite dishes and needless to say, this is my creation.
Please do try and enjoy this curry with rotis in this chilly weather.
And one more good news for all the ladies. Sweet potato is proved to be beneficial in treating wrinkles. So, start relishing this humble vegetable.

Ingredients:
Sweet potatoes: 1/2 kgs
Tomatoes: 3-4 medium sized
Onions: 3-4 medium sized
Capsicum: 1 medium sized
Oil: For deep frying
Red chilli powder: 1/2 tsp
Turmeric powder: 1/2 tsp
Coriander powder: 1/2 tsp
Cumin powder: 1/4 tsp
Garam Masala: 1/4 tsp
Cashews: 10-12
Ghee: 2tsp
Ginger garlic paste: 2 tsp
Coriander leaves
Salt to taste.

Preparation: 
Boil the sweet potatoes. Peel them and cut into cubes or strips or just make roundels, depending on the size and shape of the vegetable.
Deep fry them in hot oil, drain on an absorbant paper and keep aside.
Make a paste of raw tomatoes, onions and cashews. No need to add oil.

Procedure: 
1.Take ghee in a pan. Put cumin seeds.
2. Put all the ground masala and fry till the oil separates from the sides of the pan you can add little water to it.
3. Add all the dry masalas and fry again.
4. Put the diced capsicums and ginger garlic paste.
5. Add little water, cover and cook for a while.
6. Put the fried sweet potatoes. Mix well.
7. Add salt go taste.
8. Garnish with coriander leaves and serve hot.
