Cauliflower Masala
Cauliflower or Gobhi Masala is a winter speciality. Nowadays, you will get cauliflowers throughout the year. Thanks to the chemicals. But you will get nice and bright white cauliflowers only in winter.
Still you need to wash it in salt water twice.
You can cook cauliflowers in many ways. Thus is one of the most popular Dhaba style curry. I tried hard to make short cuts in this recipe, but couldn't.
It is worth all the effort you put in, so enjoy cooking.

Ingredients: 
1. cauliflower: 1 no
2. Onions: 3 medium sized
3. Tomato puree: 1 cup
4. Cashew paste: 2tbsp
5. Coriander powder: 1tsp
6. Red chilli powder: 1tsp
7. Garam Masala: 1/2 tsp
8. Green chillies: 2nos
9. oil: 3 tbsp
10. Salt to taste
11. Coriander Leaves for Garnishing.
12. Ginger- Garlic paste: 1tbsp

Preparation:
Wash the cauliflower florets in hot salted watee twice and put it on an absorbent paper.
Soak cashew nuts in warm water for about 30 mins and make a fine paste.

Procedure:
1. Take washed cauliflower florets in a bowl. Put salt, chilli powder, garam masala and coriander powder and 2 tbsp of oil and mix well. Keep it covered for 10 mins.
2. Grill the marinated cauliflowers in pre heated oven for 10-12 mins. (You can fry them in a pan or Microwave them)
3. Take oil in a pan, put finely chopped onions and saute.
4. Add ginger-garlic paste and fry well.
5. Add the pureed tomatoes and all the drt masalas. (Put half of the masalas for marinating the cauliflowers and the remaining for the gravy)
6. Put the cashew paste and grilled cauliflowers. Mix gently.
7. Adjust the seasoning and garnish with fresh coriander leaves and serve hot.
