Hummus
This popular Middle Eastern dip is my personal favourite. I have tried it in many restaurants but each one varied slightly, just like chutney. Because every Home has a different recipe.
Falafel is incomplete without hummus. This is not just a recipe, this is a tradition.
Nowadays, these dishes are becoming popular. May be because they are light, healthy, different or is it similar to Indian cuisine?? I really don't no...or may be because it has all the above qualities.
Okay let's not get into all that...
The main ingredient for Hummus is the Chick pea or our own Kabuli chana. You can use Hummus as a sandwich spread, with chapatis, Pita pockets or just like that.
So let's enjoy Hummus and Falafel with a dash of Tahini..
Tahini is used as a condiment to accompany with Falafel, Hummus and many other dishes.
Ingredients for Hummus:
1. Chick peas: 250 gms
2. Tahini: 3-4 Tbsps
3. Garlic: 8-10 cloves
4. Lemon juice: 2 Tbsps
5. Paprika or Red chilli powder: 1/4 Tsp
6. Olive oil: 1/4 cup.
Preparation:
Soak the chick peas overnight and pressure cook them until soft.
Tahini sauce:
Ingredients:
1. Sesame seeds: 50 gms
2. Garlic: 4-5 cloves
3. Lemon juice: 1tsp
4. Olive oil: 2 tbsps
5. Warm water: 3 tbsp
Procedure:
1. Lightly roast the sesame seeds. Allow them to cool.
2. Put all the ingredients to the mixer jar except warm water.
3. Make a paste.
4. Slowly add warm water to make a creamy sauce.
Procedure for Hummus:
1. Put the boiled chick peas in a food processor or a mixer jar.
2. Put garlic, salt and make a course powder.
3. Slowly add olive oil and Tahini sauce and blend well. I prefer my Hummus to be creamy. If you don't like it creamy, you can keep it coarse.
4. You can add more olive oil if you want to.
5. Your Hummus is ready.
