Masala Dosa

What can i say about Masala Dosa??
This mouth watering and hugely popular south Indian snack;....no.."staple food" has gained popularity throughout the world. Every hotel and home in south India has a different and secret recipe for dosa. Dosas are synonymous with South India. Nowadays every nook and cranny has a Dosa shop and they make their own version of "Dosa"
 I grew up in Mysore, savouring the finest dosas made by my mother. I am very happy to share this recipe with you all.
 And once in a while, my father used to take us to restaurants and we sisters would always buy the same, yet legendary dosas. This was not just our case, but every Mysoreans.  I just cannot forget the aroma of the dosas, the potato filling, ghee on top...uff can't wait to make and relish Dosas. Come, let's make Dosa.

Ingredients:
1. Raw rice: 3 cups
2. Urad dal or split black gram: 1 cup
3. Moong dal or green gram: 1tbsp
4. Poha or flattened rice: 2 tbsp
5. Fenugreek seeds: 1 tsp
6. Rice flour: 1 tbsp
7. Sugar: 1/2 tsp
8. Salt to taste.

Preparation:
Soak rice, black gram, green gram, fenugreek and poha in water for 5-6 hours or more.
Wash thoroughly. Grind to a smooth paste.
Keep it covered for 6-8 hours.





Procedure:
1. Mix salt, sugar and rice flour mixed with 1/2 cup of water to the fermented batter.
2. Mix well till sugar dissolves completely.
3. Heat the tawa. Pour a ladle of the batter and make thin pancakes or the Dosa. Put oil or butter and cook till crisp.
4. Serve hot with chutney and potato filling.

Recipe for the Coconut chutney:

Ingredients:

1. Grated Coconut: 1cup
2. Fried grams: 2 tbsp
3. Ginger: 1" piece
4. Green chillies: 3-4 nos
5. Tamarind pulp: 1 tsp
6. Salt to taste.
Procedure:
Grind all the ingredients in a mixer grinder till smooth.
You can put tempering on top.
For tempering:
Take one tsp of oil, put mustard seeds. Allow them to splutter. Pour it on top of the chutney. This prevents chutney from going bad.

Recipe for the potato filling:
Ingredients:
1. Potatoes: 1/4 kg
2. Onions: 2 nos
3. Mustard seeds: 1/4 tsp
4. Curry leaves: A few
5. Coriander leaves: A small bunch
6. Salt to taste.
7. Turmeric: 1/4 tsp.
8. Green chillies: 4-5 nos.

Preparation:
Boil the potatoes and peel them.
Chop the onions.
Slit the green chillies.

Procedure:
1. Take 2 tsp of oil in a pan. Put mustard seeds, curry leaves and chopped onions.
Fry till translucent.
2. Put salt, turmeric powder and boiled potatoes. You can add boiled peas also.
3. Mix well. Add chopped coriander leaves.
