Tawa pulao
Tawa pulao:
Tawa pulao is one of the most popular Street food of Mumbai. It is a one pot dish which doesn't require grinding. Because we usually grind the masalas for pulao. Yes, it tastes like a biryani but with subtle flavours. This is a big hit in my house as well as a tasty tiffin box recipe !!
I usually cook for a family of four. So you can increase or decrease the amount of the ingredients accordingly.
Ingredients:
Basmati rice: 2 cups
Vegetable: About 2 cups(Here, I have used
Beans,carrots, capsicum
Potatoes and Green peas)
Onions: 2 Medium sized
Tomato: 1 Big sized
Whole spices: cloves: 4
Cinnamon: 1"piece
Cardamom: 3
Star anise: 1
Bay leaves: 1-2
Pav Bhaji Masala: 1 tsp
Coriander leaves: To garnish
Oil and ghee: 2 tbsp each
Red chilli powder: 1 tsp
Salt: To taste.
Pudina leaves: A few
Preparation:
Cook the rice, drain and keep aside. Parboil the chopped vegetables.
Procedure:
1. Take ghee in a pan. Put the whole spices and add pudina leaves.
2. Put green chillies and sliced onions. Fry till onions turns pink.
3. Put the chopped tomatoes, mix well.
4. Put all the dry masalas, i.e red chilly powder, turmeric,salt and pav bhaji masala. Mix well.
5. Slowly add rice, mix evenly. Adjust the seasoning. Garnish with coriander leaves and serve hot with Raita of your choice.
