Alu poori and Bhaji
This combination is a sure hit wherever you go whether it's a hotel, party or just like that. Only thing is the bhaji differs from place to place. So without much ado, Let's start this "Made for each other" combo of Poori-Bhaji.
Ingredients for Alu poori:
1. Boiled and Mashed potatoes: 4 nos
2. Wheat flour: Approximately 2 cups
3. Ajwain: 1tsp
4. Red chilli powder: 1tsp
5. Fresh Coriander leaves
6. Salt to taste.
Procedure:
1.Finely chop the coriander leaves.
2. Mash the boiled potatoes
3. Mix all the ingredients and knead well
4. Make pooris and fry in hot oil.
Ingredients for Bhaji:
1. Onions: 1 Big sized
2. Potatoes: 1/2 kgs
3. Tomatoes: 3 nos
4. Green chillies: 2 nos
5. Red chilli powder: 1/2 tsp
6. Pav Bhaji Masala: 1tsp
7. coriander leaves
8. Fenugreek seeds: 1/2tsp
9. Oil
10. Salt tp taste
Preparation:
Boil the Potatoes and lightly mash them.
Finely chop the onions and Tomatoes.
Slit the green chillies lengthwise.
Procedure:
1. Take 3 tbsp of oil in a pan, add the fenugreek or the Methi seeds.
2. Put in the Green chillies and chopped onions. Fry till onions turn light brown.
3. Add the tomatoes and all the masalas and fry till the oil separates.
4. Put a cup of water, add the mashed potatoes and mix well. Adjust the seasoning and consistency. If you feel it is too thick, add some more water. Allow it to boil.
5. Remove from fire, Garnish with fresh coriander leaves and serve hot with its best partner, the Pooris.
