Baingan ka Bharta 
This mouth watering Roasted brinjal masala is basically from Maharashtra. This is my personal favourite also. Probably you can never go wrong with this dish. I like it spicy, but if you are not fond of it being spicy, reduce the amount of chilli powder. But be generous with ghee I bet, you will not regret!
This goes well with almost anything , like, chapatis, phulka, Akki and Ragi rotti, rice etc ; yes, we are spoilt for choice.
If everything is ready, then you can make it within ten minutes.

Ingredients:
1.Brinjals (Big, Purple ones): 500 gms
2. Onions: 4 nos
3. Tomatoes: 5 nos
4. Green chillies: 4-5 nos
5. Turmeric Powder: 1/2 tsp
6. Red chilli powder: 1 tsp
7. Coriander powder:1 tsp
8. Garam Masala
9. Ghee: 1tsp
10. Oil: 3-4 tbsp
11. Salt to taste

Preparation:
Finely chop the onions and the Tomatoes. Keep separately.
Roast the Brinjals in the oven or on the gas stove until cooked. Allow it to cool. Peel and roughly  chop the Roasted Brinjals.
Slit the green chillies.

Procedure: 
1. Take oil in a pan, add 1 tsp cumin seeds.
2. Put the slit green chillies, and chopped onions. Fry till onions are soft.
3. Add the chopped Tomatoes and all the dry powders except Garam Masala. Let it cook.
4. Put the Roasted and chopped Brinjals and give it a nice mix. Cover and cook for a mi ute.
5. Put finely chopped fresh Coriander leaves, ghee and garam Masala. Mix well cover and simmer for a minute. Garnish with lots of coriander leaves and serve hot or warm, the choice is yours.
