Momos

Momos are the perfect indulgence for winter..right? I know, our mouths water by the mere mention of these amazing dumplings.
I have tasted momos in many up market restaurants and on streets. But the best ones are the ones i had in fancy bazaar, Guwahati and in a small shop in Khatmandu. I swear, i haven't tasted anything like that recently.
Almost every region has their version of momos...we make kai kadubu and uddina kadubu during Nagara panchami, Maharashtrians love their ganesh chaturthi modaks, chinese have dimsums, and Italy's ravioli is also quite similar, may be the fillings are different according to the availability of local ingredients.
Traditionally momos are steamed. Now we get chocolate momos, fried momos and sizzlers. But i like the traditional steamed ones. So i will show the traditional ones. You can put the filling of your choice, like tofu or cheese.
As you all know, the route to a man's heart is through his stomach. When we cook, we usually keep our children in mind. But this time, cook for your hubby dearest. Happy cooking.

Ingredients:
1. All purpose flour: 2 cups
2. Cabbage: 1/2 kg
3. Chillies: 5 nos
4. Oil: 2 tsps
5. Salt: To taste
6. Ginger: 2" piece

Preparation:
Shred the cabbages. Mix green chillies, ginger and salt. Keep it for 10 mins. Squeeze out the excess water and use this for filling. You can add finely chopped carrots and onions also.

Procedure:
1. Mix maida, water and salt to make a soft dough like the way you make for roti. Keep aside.
2. Mix shredded cabbages, green chillies, ginger and salt.
3. Roll the dough to very thin sheet, make circles put 1 tsp of vegetables mixture and shape like modaks
4. Steam for 15 mins. Serve hot with the spicy momo dip.












You can try atta momo also.

Recipe for Momo dip:
Ingredients:
1. Tomatoes: 3 nos
2. Red chillies: 7-8 nos
3. Garlic cloves: 5-6
4. Vinegar: 1 tsp
5. Salt to taste
6. Sugar: 1 tsp.
 Preparation:
Boil the Tomatoes and red chillies.
Peel the tomato skin.
I have used Byadgi variety of red chillies, which gives bright red hue to the dip.

Procedure:
1. Put boiled and peeled Tomatoes, boiled red chillies, garlic and all the other ingredients to the blender.
2. Adjust the seasoning and serve with momos.
