Sabudana vada

Sabudana or Tapioca pearls or sago or sabbakki is used all over India to make varieties of dishes, especially during or breaking fasts during religious festivals as it is rich in carbohydrates and it gives instant energy.
Sabudana vada or patties is a very popular tea time snack in many parts of India.
You can enjoy these vadas with ketchup, chutney or as burger patties. And not to forget vada pav.
These vadas are made with soaked sago. You can soak the sago in advance and can easily be stored in the refrigerator for 2 to 3 days.
Let's make these yummy and crispy sabudana vadas.

Ingredients:
1. Sabudana or sago: 200 gms
2. Potatoes: 3-4 nos
3. Peanuts: 1/4 cup
4. Gram flour: 1 tbsp(optional)
5. Green chillies: 4-5
6. Grated Coconut: 1 cup(you can reduce the quantity by half)
7. Coriander leaves (chopped):  1 cup
8. Lemon juice: 2 tbsp
9. Grated ginger: 2 tsp
10. Salt to taste.
11. Oil for deep frying.

Preparation: 
Soak the sabudana for 7-8 hours, preferably overnight. Squeeze out excess water and keep aside.
Dry roast the peanuts and de skin them.
Boil the potatoes, peel and mash them.
Finely chop the green chillies and coriander leaves.
Procedure:
1. Mix all the ingredients. No need to add water.
2. Divide them into lemon sized balls.
3. Press gently to make patties
4. Deep fry them in oil till golden brown and crispy.
5. Serve hot with Tomato ketchup.
