Home made eggless mayonnaise and spread

Mayonnaise. A dish which brings a frown upon the faces of all diet - freaks. Something associated with fat, grease, and a stepping stone to being overweight. As tasty as it is, it is equally fattening ; unless, you prepare it at home! Making mayonnaise at home sounds next to impossible to most, but I'm here to make it easier and naturally, healthier.
You can use it while making Burgers, sandwiches or as a dip.
In this recipe, I have used both butter and olive oil. You can use only olive oil. And you can replace all purpose flour with whole-wheat flour.

Ingredients:
1. All purpose flour or Maida: 2 tbsps
2. Butter: 2tbsps
3. Milk: 2 cups
4. Mustard powder: 1/2 tsp
5. Chilli flakes: 1/4 tsp
6. Tomato ketchup: 2 tbsps
7. Finely chopped mix vegetables: 1 cup
8. Salt to taste
9. Olive oil: 3-4 tbsps.

Preparation:
Finely chop all the vegetables. I have used bell peppers, cucumbers, lettuce and some olives. You can put parsley also.
First we will prepare the basic Mayonnaise, then we will make the sandwich spread using Mayonnaise.

Procedure:
1. Take butter in a pan. You can put 5-6 garlic cloves.  Put all purpose flour or maida and fry till light golden.
2. Gradually add milk and mix evenly.
3. Put salt to taste. Remove from fire. Let it cool. Put mustard powder and chilli flakes.
4. Put this in a blender along with the olive oil for a minute. You will get a homogenous and creamy mayonnaise!



For sandwich spread:
1.Take half a cup of mayonnaise in a bowl. Put finely chopped vegetables and tomato ketchup.
2. Add chilli flakes and mix gently.
3. Your sandwich spread is ready.
4. You can put dried mint leaves to the mayonnaise to make mint mayo.
