Khichdi
Every one loves khichdi right?
We are totally exhausted by all the fun and frolic of the festivities and not in a mood to cook...but don't want to eat outside food... Want to eat wholesome food... Don't want to pile up on extra calories...
The answer is definitely "Khichdi". We south Indians call it Khara pongal. Whatever it is, it is everyone's favourite.
We used to look forward to the Bhog or prasad which they used to serve after the Durga pujo or the ones served at the Iskcon or in gurdwaras. Khichdis never fails to impress your tummy.
Today, I am going to teach you the Khichdi, which is slightly different from the pongal that we usually make. It's a one pot dish and a complete meal in itself. You don't need any accompaniment with this. Just serve it with a dollop of ghee and your meal is ready. You can serve it with papads, kadhi, imli chutney or alu- band Gobhi ki subzi. The choice is yours...
Come, let's make khichdi.
Ingredients:
Rice: 1 cup
Moong or green gram dal: 3/4 cups
Bay leaf: one big leaf
Ginger: 1" piece
Potato: 2 medium sized
Green peas: 1/2 cup
Cashews: A few
Red chillies: 3-4 nos
Cumin seeds: 1 tsp
Pepper powder: 1 tsp
Ghee or clarified butter: 3 tbsps.
Preparation:
Wash rice and green gram dal. (Here, i have used jeera rice..you can use the regular rice or the basmati rice)
Drain the water and keep aside.
Peel and cube the potatoes.
Procedure:
1. Take ghee or clarified butter in a deep pan. Put cumin seeds red chillies and bay leaf. Put cashews.
2. Add rice, dal and potatoes. Fry for 10 mins or till you get a nice aroma.
3. Put all the above ingredients along with salt and turmeric in a pressure cooker and cook till soft.
4. Adjust the seasoning and put a spoonful of ghee and serve with papads.
