Jalebi Mix and Jalebi
If I say Jalebi is a very loved dessert throughout India, some people may disagree.. Because it is relished as a breakfast accompaniment with poha in many parts of our country.
It is enjoyed with breakfast, lunch as well as dinner.
You can serve Jalebis with creamy dahi, rabri or just like that. It will be delicious.
If I start writing about Jalebis, I have many stories to share. But i want to keep my blog as short as possible and not bore you with my stupid stories...
Today, i am going to show you a very easy and tasty recipe of jalebi. It stays crisp for a whole day.
You can make the Jalebi mix in advance and store it in an air_tight container for a month and surprise your guests.
Jalebis are very light and you can eat them in summer also.
Now you have the recipe in your hand and it's time for you to pamper your loved ones by making juicy, crispy and succulent Jalebis.

Ingredients:
1. All purpose flour or Maida: 1 cup
2. Urad dal powder: 4 tsps
3. Ghee: 1tsp
4. Sugar for sugar syrup: 2 cups
5. Saffron: A few strands
6. Cardamom: 4-5
7. Eno fruit salt: 1tsp
Preparation:
Make sugar syrup by keeping 1 cup water and 2 cups of sugar. Keep on a medium flame. Cook till a single string consistency.
Put saffron strands and cardamom powder. Allow to cool.
Grind urad dal to a fine powder. Use only 4 tsps in this recipe.
Mix all the dry ingredients, including ghee and mix well.(This is your jalebi mix. Youcan store them in the refrigerator for about a month)
Procedure:
1. Mix enough water to the dry ingredients mixture to make batter of flowing consistency.
2. Fill the batter in a piping bag or a zip lock cover.
3. Make a small hole.
4. Heat the oil or ghee in a flat pan.
5. Make jalebis ot pretzels.
6. Fry till crisp.
7. Dunk the fried jalebis in sugar syrup for a minute.
8. Remove the jalebis from the sugar syrup and serve hot.
