Sol Kadhi
This is a refreshing and a healthy drink, specially suited for summer months.
The main ingredient of this recipe is kokum or punarpuli. You all know the health benefits of kokum.
You can make this sol kadhi when there is too much leftover curds or buttermilk and don't know what to do with it.
This is for four people. You can adjust the quantity for your requirement.
So enjoy summer with this wonderful drink.
Ingredients:
1. Kokum: 5-6 florets
2. Grated coconut: 4 tbsps
3. Small bird eye chilli or green chilli: 2 nos
4. Butter milk: 4 cups
5. Hing: one pinch
6. Salt to taste.
Preparation:
Soak kokum in normal water for an hour or more.
Procedure:
1. Grind soaked kokum, chilli, grated Coconut, salt, hing and little buttermilk.
2. Strain them in a strainer.
3. Mix the remaining buttermilk and adjust the seasoning.
4. Garnish with fresh mint or coriander leaves. Serve cold.
