Palak Pulao

Hey foodies!
Hope you are all enjoying the monsoons.
And sometimes it's difficult to get up in the morning and enter the kitchen. Sometimes you may even feel bored to chop vegetables...Are you even bored to read my introduction? Alright..I am not going to make you guys angry by my lengthy intro.
Today I am going to show you the easiest recipe of palak rice or palak pulao.
There's nothing more comforting than a bowl of palak pulao with some boondi raita and some papads; for that crunchiness.
No need to spend hours in the kitchen, this comforting pulao makes your family happy and healthy.

Ingredients:
1. Basmati rice: 250 gms
2. Spinach: one medium sized bunch
3. Sweet corn: one cup
4. Whole spices: According to your taste
5. Green chilies: 3-4 nos
6. Cashews: A handful(optional)
7. Salt to taste:
8. Onion: one number.
Preparation:
Blanch the spinach or palak leaves and make a puree.
Slice the onions and fry till brown.
For whole spices, take a cinnamon stick, 3-4 cloves, a bay leaf, a few peppercorns and you can add spices of your choice.
Procedure:
1. Parboil the rice along with sweet corn and some salt. Drain and keep aside.
2. Take a tbsp of clarified butter or ghee in a pan. Put all the whole spices.
3. Put cashews, slit green chilies and the spinach puree. Add salt to taste and cook for a minute.
4. Add the cooked rice and mix gently. Cook on a low heat till rice becomes fluffy and well cooked.
5. Serve with boondi raita and papad.
