Milk Cake
I used to wonder how these sweets are made. I used to watch doodhwalas in the bylanes of Kolkata carrying big vessels full of fresh milk, then boiling in big kadhais to make mouth watering mishtis. The whole area would look like a scene from Tagore's poems. Am i sounding too poetic? Yes, the very mention of Kolkata and its sweets make me feel nostalgic.
There is no match to a sweet made in Kolkata. Is it because of the chulha, or the milk? Or the earthern vessels they use? It's really difficult to decide.
Whatever it is, it's a treat to make and enjoy milk based sweets.
They are easy to prepare with less ingredients and more patience of course;
You will get milk cakes in almost all sweet shops. But there's nothing like home made ones.
Believe me, it is pretty easy to make and...i know, you all love Milk cakes. When my sister was small, she used to eat only milk cakes. This is her favourite sweet, she does not enjoy very sugary sweets. There are many people like her who don't like their sweets to be very sweet.
Come, let's make milk cake for people as such.
Ingredients:
1. Milk: 1 ltr
2. Sugar: 5 tbsps
3. Ghee: 1 tbsp
4. Alum: 2 pinches.
You can make around 10 pieces with the given ingredients. You can increase the quantity according to your requirement.
You can replace alum powder with 1 tbsp of lemon juice. But with alum, you will get a nice chewy texture.
Procedure:
1. Boil milk in a heavy bottomed pan.
2. Keep stirring till it reduces to half. This
takes approximately 30 mins.
3. Add the alum powder and mix well.
4. Cook till the mixture becomes grainy and
thick and leaves the sides of the pan.
5. Put half of the sugar and let it dissolve
Completely.
6. Put the remaining sugar and mix well.
Keep stirring until the mixture leaves the
Sides of the pan.
7. Pour the mixture to a greased bowl or
plate. Cover with a thick towel and keep
aside for 2-3 hours.
8. Cut into desired shape and serve.
