Baingan ka Bharta

Baingan ka Bharta  This mouth watering Roasted brinjal masala is basically from Maharashtra. This is my personal favourite also. Probably you can never go wrong with this dish. I like it spicy, but if you are not fond of it being spicy, reduce the amount of chilli powder. But be generous with ghee I bet, you will not regret! This goes well with almost anything , like, chapatis, phulka, Akki and Ragi rotti, rice etc ; yes, we are spoilt for choice. If everything is ready, then you can make it within ten minutes. Ingredients: 1.Brinjals (Big, Purple ones): 500 gms 2. Onions: 4 nos 3. Tomatoes: 5 nos 4. Green chillies: 4-5 nos 5. Turmeric Powder: 1/2 tsp 6. Red chilli powder: 1 tsp 7. Coriander powder:1 tsp 8. Garam Masala 9. Ghee: 1tsp 10. Oil: 3-4 tbsp 11. Salt to taste Preparation: Finely chop the onions and the Tomatoes. Keep separately. Roast the Brinjals in the oven or on the gas stove until cooked. Allow it to cool. Peel and roughly  chop the Roasted Brinjals.

Palak wali choley I know you are recalling where i had this?? Must be in a North-Indian speciality restaurant...Though this looks exactly like the normal chana Masala or choley, this is slightly rich in flavours and of course, colours beacause of Spinach. Yes, you heard it right. Spinach goes very well with kabuli chana. It not only improves the texture, but also the taste by adding nutritional value to your dish. Ingredients: 1. Kabuli chana: 250 gms 2. Onions: 3 medium sized 3. Tomatoes: 4 medium sized 4. Green chillies: 3-4 nos 5. Spinach: 1 cup 6. Kasuri Methi: 1 tbsp 7. Chana Masala: 1 tsp 8. Coriander Powder: 2 tsp 9. Cumin Powder: 1/2 tsp 10. Red chilli powder: 1 tsp 11. Cream: 1 tbsp 12. Oil: 3 tbsp 13. Salt to taste 14. Ginger- Garlic paste. Preparation: Finely chop the onions and puree the Tomatoes. Blanch the spinach leaves in hot water, cool them and make a puree. Pressure cook the chanas till soft. Procedure: 1. Take about 3 tbsps of oil in a pan. 2

Alu poori and Bhaji This combination is a sure hit wherever you go whether it's a hotel, party or just like that. Only thing is the bhaji differs from place to place. So without much ado, Let's start this "Made for each other" combo of Poori-Bhaji. Ingredients for Alu poori: 1. Boiled and Mashed potatoes: 4 nos 2. Wheat flour: Approximately 2 cups 3. Ajwain: 1tsp 4. Red chilli powder: 1tsp 5. Fresh Coriander leaves 6. Salt to taste. Procedure: 1.Finely chop the coriander leaves. 2. Mash the boiled potatoes 3. Mix all the ingredients and knead well 4. Make pooris and fry in hot oil. Ingredients for Bhaji: 1. Onions: 1 Big sized 2. Potatoes: 1/2 kgs 3. Tomatoes: 3 nos 4. Green chillies: 2 nos 5. Navratna curry: Navratna or Navratan curry is a very popular side dish. It's more popular in South Indian restaurants than in homes. May be because of the richness, people make rarely at home. So, in order to make it light, i have reduced the quantity of some of the ingredients. And, you  an use milk instead of cream. If your kids don't like dry fruits, don't worry. They will lap up the whole dish after tasting. We need more calories and proteins in winter. And this is just perfect for winters. So just go ahead... Don't worry about the calories..Just enjoy the food and workout more. Ingredients: 1.Fresh Green peas: 1 cup 2. Cubed paneer: 100 gms 3. Pineapple: About 2 tbsps, diced 4. Cashews: 2 tbsp 5. Sweet potato surprise

Sweet potato surprise This is the season of fresh vegetables and sweet potato is one of them. We don't experiment much with this humble vegetable; we rather stick to the same limited age old recipes and keep on trying the same things year after year.  This is one of my most favourite dishes and needless to say, this is my creation. Please do try and enjoy this curry with rotis in this chilly weather. And one more good news for all the ladies. Sweet potato is proved to be beneficial in treating wrinkles. So, start relishing this humble vegetable. Stuffed Bhindi

Stuffed Bhindi Winter is the season for fresh vegetables. This way we, Bangaloreans are spoilt for choice when it comes to vegetables. Today i am going to teach you stuffed Bhindi or okras. It goes well with Rice-Dal and Roti. It's a bit spicy, so if you are not a fan of spicy food, you can reduce the quantity of spices used. But be generous with oil otherwise, the vegetables will stick to the bottom of the pan. Ingredients: 1. Bhindi or Okra: 1/2 kg 2. Red chilli powder: 1 tsp 3. Coriander powder: 2 tsp 4. Cumin powder: 1/2 tsp 5. Amchoor or Raw mango powder: 1/2 tsp 6. Asafoetida: 1/4 tsp 7. Gram flour: 2 tsp 8. Oil: 3-4 tbsp 9. Salt to taste Preparation: Mix all the spices and gram flour. Slit the Bhendis and stuff the masalas and keep aside. Procedure: 1. Take oil in a pan. 2. Put all the stuffed Bhindis and simmer. 3. Cover and cook till soft stirring in between. 4. Sprinkle the remaining masala and mix gently. 5. Remove from fire. Garnish with onion ring
