Banana and oats Muffins

Hi all, How was sankranti celebrations??
 Hope you all enjoyed exchanging Ellu-Bella..
After all the festivities, especially sankranti, I really wonder what to do with such a big heap of bananas? Enough of the smoothies and fruit salads...time to do something different this time. Because many kids refuse to eat or take bananas for lunch box as they become messy. So this is definitely a better alternative for lunch box and a convenient breakfast recipe.

Ingredients:
1. Mashed Banana: 1cup
2. Sugar: 1/2 cup
3. Milk: 1/4 cup
4. Butter or oil: 1/2 cup (use 1/3 cup oil, if
                             You are using oil)
5. Lemon juice: 2tsp
6. Whole wheat flour: 11/2 cups
7. Baking powder: 1 tsp
8. Cooking soda: 1/2 tsp
9. Raisins or chocochips or walnuts: 2 tbsp
10. Vanilla essence: Few drops
11. Oats: 2 tsp
12. Salt: A pinch.

Procedure:
Chop the bananas and mash nicely with a fork.
Sieve the atta, baking powder and cooking soda twice to make them airy. Add oats.
Pre heat the oven at 180℃ for 10 mins.
Keep the dry and wet ingredients separately.

Preparation:
1. Mix all the wet ingredients in a blender. Transfer them to a big bowl.
2. Add sugar to the wet ingredients and mix till the sugar dissolves.
3. Gradually add the sieved dry ingredients. Mix gently. Do not over beat them.
4. Add the mashed bananas and choco chips or raisins or walnuts or whatever you want to put.
5. Add milk to get pouring consistency.
6. Put one spoon of the batter to the muffins mould. Tap gently.
7. Bake in the pre-heated oven for about 15-20 mins, depending on the oven.
8. Insert a fork to check and ensure that your muffins are done.
9. Cool on a rack and serve.
You can make about 20 muffins with the above-mentioned ingredients.
